These pickled onions are quick and easy to prepare. They’re ready to serve in 30 minutes and are the perfect condiment to just about any meal!

I have been obsessed with pickled onions for quite a few years now, and I’m so excited to finally show you how to make them at home!

It all started with my love of classic dill pickles when I was growing up. I literally used to eat one of those pickle-in-a-bag products that’s sold at gas stations or movie theaters every single day when I was in middle school. I then discovered how much I love Mexican pickled jalapenosa little later in life even though my parents had been eating every day growing up. And finally one day, I ordered a sandwich at a restaurant that was filled with pickled red onions and I fell in love with the flavor!

Thispickled onion recipeis the perfect condiment to add to anything that needs a little extra tangy crunch. They’re ready to eat in only 30 minutes and is one of the easiest recipes you’ll ever make!

How to make pickled onions

  1. Heat water, apple cider vinegar, sugar, salt, coriander seeds and black peppercorns in a medium pot until simmering. Remove from heat.
  2. Place thinly sliced red onions in a 16-24 ounce glass jar or container.
  3. Pour pickling liquid on top of onions and let sit for 30 minutes.

That’s pretty much it! If you don’t plan on serving them right away, simply cover the jar and store in the fridge for up to 2 weeks. The longer they sit and soak, they’lltastesweeter and get pinker in color!

The best storage jars for pickled onions

Though you can store these pickled onions in any glass container you want, I love using my tall wide-mouth Ball jars. They’re inexpensive, high quality and super versatile! I use them to store so many things in the kitchen – from salad dressings and sauces to soup and beans!

  • In a medium pot, add water, apple cider vinegar, sugar, salt, coriander seeds and peppercorns. Place over medium-high heat and bring to a simmer, stirring occasionally to make sure the sugar and salt fully dissolve. Remove from heat.

  • Place onions in a large 16 to 24 ounce glass jar or container. (I used thiswide mouth Ball glass mason jarand it fit perfectly.)

  • Carefully pour the hot vinegar mixture over onions and let sit for 30 minutes at room temperature. Serve immediately or cover and refrigerate for up to 2 weeks.

    Love this. Important to use a relatively tall/narrow container (vs. a low/wide one) or there might not be enough liquid to cover.

    Could regular pickling spices be used ? I have a little jar of that on hand.
